Sweet and Savory – Ohh Strawberries!!

Its strawberry season and we just can’t get enough of it! We’ve brought for you quick, savory and sweet recipes to utilize these heavenly strawberries in the most perfect of ways! Enjoy!

Sweet:

Nutella and Strawberry Crepes:

Strawberries are in season. And Nutella…well you just can’t go wrong with that! Nutella and strawberry crepes are a decadent yet an easy dessert. The crepes are rolled up with a generous amount of Nutella filling and sliced strawberries. Make these for breakfast, lunch or dinner or a nice fancy weekend brunch!

Ingredients:

  • 1 cup plain flour
  • 1 tsp. baking powder
  • 1 tbsp. milk powder
  • 1 tbsp. melted butter
  • 1 tbsp. cinnamon powder (optional)
  • 2 tbsp. powdered sugar
  • Milk

Directions:

  • In a large mixing bowl whisk together the flour, the baking powder, the milk powder and butter. Gradually, add in milk and water, stirring to combine. Add salt and beat until creating a smooth batter.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn over and cook the other side. Take the crepe out of the pan and spread Nutella on on the surface of one side and then place sliced strawberries on the spread covered crepe. Fold in half and coat with powdered sugar.
  • Add a fresh whole strawberry and some whipped cream on the top to give it an exciting look and enjoy!

Savory:

Cilantro Lime Grilled Chicken with Strawberry and Jalapeño Salsa

The sweetness of strawberries when combined with the tanginess of jalapenos becomes a vibrant glaze which tastes excellent when paired with grilled chicken.

Ingredients:

For the Strawberry Salsa:

  • Strawberries, diced (2 cups)
  • 1/4 cup red or green onion, finely diced or sliced
  • 1 jalapeno, finely diced
  • 1 lime, juice and zest
  • 2 tablespoons cilantro, chopped
  • Salt to taste

For The Cilantro Lime Grilled Chicken:

  • 1 pound boneless and skinless chicken breasts
  • 2 limes, juice and zest or 1/4 cup lime juice
  • 1 tablespoon oil
  • 2 tablespoons cilantro, chopped
  • 1 clove garlic, grated
  • 1 jalapeno, finely diced (optional)
  • salt and pepper to taste

Directions:

For the Strawberry Salsa:

Mix everything and enjoy!

For the Cilantro Lime Grilled Chicken:

  • Marinate the chicken in the mixture of the lime juice and zest, oil, cilantro, garlic, jalapeño, salt and pepper for 30 minutes to an hour.
  • Grill the chicken over medium-high heat until cooked, about 3-5 minutes per side.
  • Serve topped with the strawberry and jalapeno salsa.
