Tis’ the season for oranges … and flu. Oranges contain a rich dose of vitamin C, which will definitely help fight those sniffles while also satisfying your palate. So grab a few oranges, and get cooking (or juicing).
Fresh Orange Smoothie (“Orange Julius”)
Enjoy this creamy smoothie while basking in the sun during those chilly winter mornings.
Ingredients:
- 4 fresh oranges – peeled
- 2 cups ice
- 1/3 cup milk
- 1-2 tablespoons honey – if needed
- 1 teaspoon vanilla
Directions:
Combine all the ingredients in a blender, and blend until smooth.
Fresh oranges and yogurt tart
This tart tastes divine, and looks classy on the dinner table too. Eat alone or wow your guests with this super easy tart.
Ingredients:
- 1/2 cup raw almonds
- 1/4 cup granulated sugar
- Salt
- 1 cup all-purpose flour
- 6 tablespoons unsalted butter
- 2 teaspoons powdered gelatin
- 1/2 cup cream
- 1 1/2 cups plain yogurt
- 1/4 cup packed light-brown sugar
- 3 medium sized oranges
Directions:
- In a food processor, pulse the almonds, granulated sugar, and 1/2 teaspoon salt until finely ground. Add flour and pulse to combine. Add butter and pulse until the mixture is crumbly and holds together when it is squeezed. Press the crumbs in bottom and up side of an 8-inch tart pan with a removable bottom. Freeze for 15 minutes.
- Preheat oven to 350 degrees. Place tart pan on a baking sheet and bake until the crust is golden brown and set at 30 to 35 minutes. Cool for 10 minutes, then remove the tart ring.
