So you think muffin tins are only good for making cupcakes and muffins? Think again. Muffin tins are very versatile and can be used to create a whole bunch of bite-sized treats for breakfast, lunch, dinner or impromptu snack cravings. Here are a few yummy recipes to get you started. Perfectly round chocolate chip lava cookies are a blissful dream for those of you with a sweet tooth and that is our first recipe on this list. Top it off with a scoop of your favorite ice cream and savor the perfect blend of the cookie’s warmth with the ice cream’s chilliness.
Chocolate Chip Lava Cookies: Recipe:
- ½ cup butter(room temperature)
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- ½ tablespoon vanilla extract
- 1¾ cups all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 bag milk chocolate chips
- Ice cream (optional)
Instructions
- Preheat oven to 180° C. Spray the muffin tin with a cooking spray. Assemble the chocolate chips in a microwave-proof bag. Heat it up for 30 seconds. Remove the bag, flip it, and reheat for an additional 10-15 seconds until all the chips are softened. Set it aside to cool down.
- Take an electric mixer and mix the butter with the sugars for about 3-5 minutes until it is all light and fluffy. Add an egg along with the vanilla extract and use a beater to mix everything up. Meanwhile, in a separate bowl, whisk together the flour, the salt, and the baking soda. Add to the wet ingredients and beat on a low speed till the time everything is mixed properly. Add the remaining chocolate chips (1 cup) and stir to combine.
- Using half the cookie dough, scoop around 1.5-2 tablespoons of dough, flatten it out a bit, and place it in the bottom of the muffin tin. Repeat for a total of 10 cookies. Cut a small tip in the corner of the bag, and gently squeeze a layer of chocolate over the cookie. Scoop and flatten the remaining dough, and place it on top of the chocolate layer. Bake at 350° for 15-20 minutes, until the edges are just browned. As soon as they come out of the oven, run a knife around the edges to make for easy removal later. Let them cool down completely before removing them from the muffin tin, and run a knife around the edge to help it loosen up.
- Top it off with a scoop of your favorite ice cream. Enjoy!
